Production area
Vineyards in the Valpolicella Classica area, located in the municipality of
Fumane.
Grape varieties
Corvina and Corvinone 65%, Rondinella 25%, others 10%.
Alcohol by volume
14% vol.
Grape harvesting
Only the best straggly bunches or their extremely ripe parts that have been
exposed to the sun are picked by hand and placed in boxes. It is the “recete”,
or sides of the bunch that are preferred, and from which this Valpolicella
prince obtains its name. The grapes are left to dry for 100-120 days in boxes,
or hung in bunches according to the traditional “Sala” method.
Fermentation
Slow fermentation with maceration from 15 to 20 days. The fermentation is
stopped to preserve the typical sweetness of this product. Aged in steel vats.
Organoleptic properties
Intense ruby red colour with purplish highlights. Fruity aroma that recalls
cherries and raspberries in particular. Soft, embracing and pleasantly sweet
flavour with overtones of dried fruit. Long-lasting aroma.
Food pairings
Dessert wine. Excellent with cakes and dry pastries, also perfect with herb
cheeses.
