Production area
Vineyards in the Valpolicella Classica area, located in the municipality of
Fumane.
Grape varieties
Corvina and Corvinone 65%, Rondinella 20%, Molinara 5%, others 10%.
Alcohol by volume
14% vol.
Grape harvesting
Grapes hand-picked when ripe, then crushed.
Fermentation
Fermented for 15-20 days during October. Subsequent second fermentation
in February, where the wine macerates on the Amarone and Recioto vines
that are still slightly sweet. In this manner the aroma, extract, colour, alcohol
content and body become more complex. Aged in oak and steel barrels.
Organoleptic properties
Intense ruby red colour with granite highlights. Intense and persistent
aroma of ripe red fruit, plums and spices. Robust, harmonious body,
engaging and full flavoured, with slight tones of vanilla.

Risottos, grilled red meat, game, roasts, mature cheeses.
